Banana Nut Bread Recipe

It took me many tries to come up with, what for me, is the perfect banana nut bread. Enjoy!

Ingredients:
  • 1/3 cup white sugar

  • 1/3 cup brown sugar

  • 1/4 cup margarine, softened (can use applesauce for a lower-fat recipe)

  • 1 & 2/3 cup all-purpose flour

  • 2 eggs

  • 1/4 cup 1% milk

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/4 tsp baking powder

  • 1 tsp vanilla

  • 1 tsp cinnamon

  • 2 ripe bananas

  • 1/2 cup walnuts

  • Non-stick cooking spray

Directions:
  1. Preheat the oven to 350 degrees F (175 degrees C).

  2. Spray pan with non-stick cooking spray.

  3. Sift the flour, salt, baking powder, cinnamon, and baking soda into a large bowl.

  4. Stir in margarine (or applesauce), vanilla, and sugar until smooth.

  5. Finally, stir in the bananas, eggs, milk, and walnuts until well blended.

  6. Bake for 60 to 70 minutes in preheated oven, until a toothpick inserted into the crown of the loaf comes out clean.

  7. Let the loaf cool in the pan for at least 5 minutes, then turn out onto a cooling rack, and cool completely.

Tips:
  • Wrap in aluminum foil to keep in moisture.

  • Refrigerate the loaves for at least 2 hours before serving.

  • Do not cut loaf prior to serving.
